The kritharoto (Greek Orzo) is one of the few dishes of the new Greek cuisine, which came out of the hands of creative chefs in restaurants and taverns throughout the country.
The idea is simple and ingenious at the same time: getting a popular Greek material ,orzo pasta, in the oven or cooked in casseroles, even as a soup,and turn it into something special, using the technique of risotto from Italian cuisine.
